Recipes

Feta & Eggplant Pasta Salad

Serves 4 to 6 as a main course
For the salad:
1 medium eggplant (about 1 pound), cut into 1/2-inch cubes
2 tablespoons olive oil
Kosher salt
Freshly ground black pepper
1 pound orecchiette pasta
4-ounce block feta cheese, crumbled
1/3 cup coarsely chopped fresh Italian parsley leaves
1/3 cup coarsely chopped fresh basil leaves

For the vinaigrette:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 small clove garlic, minced
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper

For the salad: Arrange a rack in the middle of the oven and heat to 400°F. Line a rimmed baking sheet with parchment paper. Bring a large pot of salted water to a boil.

Place the eggplant on the baking sheet, drizzle with the oil, sprinkle with salt and pepper, and toss to combine. Roast until golden, tender, and caramelized, about 30 minutes. Meanwhile, cook the pasta.

Add the pasta to the water and cook until just tender. Drain and run briefly under cool water to cool the pasta down. Drain well again.

For the vinaigrette: Whisk all the ingredients together in a large bowl.

Add the cooked pasta and roasted eggplant to the dressing and toss to combine. Add the feta, parsley, and basil and give the salad one last gentle toss or two to combine. Serve at room temperature.

The Wednesday Market:  The Wednesday Market is Open - Order Now!

Good afternoon.

The Wednesday Market is open for orders. Please place your order by 10 p.m. Monday. Orders are ready for pick up between 3 and 6 p.m. Wednesday. Check the website for all of this week’s product offerings. Here is the link:

Who doesn’t love pie? Everyone at my house has their own favorite flavor. Charlie, my 7 year old son, loves strawberry pie, while Stephen, the 13 year old, prefers key lime pie. And my husband Joe loves pecan pie, followed closely by any other kind of pie. Asking me for my favorite flavor of pie is like asking me which is my favorite child!

I wish I could invite all of you into my kitchen during the holidays when the ovens turn out apple pie, pumpkin pie, pecan pie, and mincemeat pie. The aroma is heavenly, the kitchen is warm and comfy and cozy, and those who partake of the pies feel the love baked right in.

Holiday baking is time consuming and complex, but who has time for that in the summer? Summertime pies call for simplicity. Here is a great summer pie, featuring blueberries. Blackberries also work well in this recipe, which is adapted from a “Southern Living” cookbook. If you are trying to reduce the amount of sugar in your diet, you can cut down on or even eliminate the 1 cup of sugar called for, and the pie is still tasty.

Blueberry Crumb Pie

1 cup of sugar
1 (8-ounce) carton of sour cream
3 tablespoons all-purpose flour
1/8 teaspoon salt
4 cups of fresh blueberries
1 unbaked 9-inch pie shell
1 tablespoon sugar
1/4 cup dry breadcrumbs
1 tablespoon sugar
1 tablespoon butter, melted

Preheat oven to 375 degrees.

Pour blueberries into the pie shell and sprinkle with 1 tablespoon of sugar. Mix together the first four ingredients and spread over the berries. Combine the breadcrumbs, melted butter, and 1 tablespoon of sugar, and sprinkle over the top of the sour cream mixture.

Bake at 375 degrees for 45 to 50 minutes, or until the center of the pie is firm. Enjoy!

Thank you for supporting locally grown agriculture, and thank you for choosing to purchase locally. We hope you all have a good Sunday, and we’ll see you Wednesday.

CLG:  SPECIAL NOTE: Opening Bell: Melons, Tomatoes, Peaches, Pork!

Good afternoon!
Several new items listed this week (Armstead Mountain Farm yellow potatoes and bulk tomatoes), as well as your seasonal favorites. Be sure to shop all around to see the huge variety of items we have available. Last week a lady called me from Missouri looking for purple hull peas. She found us by searching online. Her neighbors were going to be traveling through Conway on Friday so she ordered 15 pounds and they picked them up for her! We got to visit with them and they were impressed with the great food selection, and bought more things off the extras table. We are very lucky to have such hard-working Growers providing so much good eats every week.

SPECIAL NOTE: We would like your help in finding EXCELLENT tenants for a VERY SPECIAL house for rent by UCA. Maybe you know someone who has children that will be attending UCA in the fall? Also great for anyone with a green thumb. Large FURNISHED house on 1/4 acre lot, large sunny garden area, greenhouse and outside storage, mud room, laundry room, pecan trees, pear tree, fig tree, roses. Students could walk to class since it’s closer to campus than some campus housing: one block from College of Business. Will need to be responsible people and able to mow the yard regularly. Please text or email Steve for more information.

Don’t forget to check out the recipe page on Conway Locally Grown!

Most items are listed by 6pm Sunday, but check back again before the market closes Tuesday night to see if any other items are ready to be harvested for you! Eat fresh! Eat local! Eat for better health!

Usually our volunteers have the market ready for customers to pick up before 4pm. If you are out and about and want to know if we are ready, just text me to see: 501-339-1039.

Check out over 500 wonderful items listed right now. See you on Friday!

Come early on Friday for the best selection from the EXTRAS table. And save your eggshells throughout the week for the laying hens! :-)

The market is now OPEN for orders.

Please check your email about 5 minutes after you place your order to make sure you get an order confirmation. Thank you for being a valuable part of CLG!
Have a great week!

ALFN Local Food Club:  The Market Is Open

Good Sunday ALFN Members,

Make sure you check out the season produce in our market right now. From patty pan squash to lamb foreshanks, from dilly beans to handmade products like latch savers, the market has so many choices for fresh produce, dry goods, meats, eggs and even toiletries!

Cosmetics

I often spend time discussing the edible side of our market, but today I wanted to give a shout out to the folks who are bringing other cosmetic products to ALFN’s market. Indeed, cosmetics are related to local food on one simple level. We also ingest cosmetics. The largest organ on our body is our skin. What we put on our skin absorbs into our body. Skin is the ultimate permeable front between the world-out-there and our world-in-here. Further, cosmetics are a battleground industry for regulation change and healthier products. Some of the least regulated products in the country are items we put directly on our skin like sunscreen and lipstick. We have some wonderful folks making quality products with pronounceable ingredients many of which are directly derived from plants (Homayd, Tammy Sue, Viney Creek, Mac Family, and Maison Terre).

If you are interested in more information, I have some fantastic resources. First, I’m a big fan of Story of Stuff: Cosmetics. Watch the video, but also check out their footnoted script with research. Another great site is the Environmental Working Group’s database called Skin Deep.

Happy lathering!

Dodgeville, WI:  Week of July 10

We had a great rain storm this past week. It really has been a good summer so far for moisture. Just about the time you think it might be necessary to irrigate we get an inch of rain! The field crops are also showing the adequate moisture levels.

If you are in the Dodgeville area today take part in the Farmers Appreciation Day.
